
These gooey vegan lemon squares come out just like I remember the traditional ones from my childhood. Slightly sweet and tart, this is a perfect lemony treat for spring and summer.

Vegan Lemon Squares
Ingredients
- Crust:
- 1 ½ c gluten-free 1-1 baking flour (or all-purpose flour)
- ¼ c sugar
- ¼ t salt
- ½ c vegan butter
- 1 c sugar
- ½ c lemon juice
- 1 c unsweetened applesauce
- ¼ c tapioca starch
- 1 T baking powder
- ½ t salt
- tapioca starch or powdered sugar

Directions
- Preheat oven to 350F. Prep a 7×11 or 9×13 baking dish with cooking spray.
- Combine crust ingredients in a bowl, then press into prepared baking dish. Bake for 10 minutes.
- In the meantime, mix all filling ingredients in a bowl.
- Spread filling over crust, and bake for an additional 45 minutes, or until the top is lightly browned and the middle is set. Let cool at room temperature, then dust with tapioca starch or powdered sugar.
- Chill in fridge overnight before serving.
I used a 7×11 baking dish in the video. If you use a 9×13, the lemon squares will be a little thinner.
For an 8×8 pan, halve all ingredients, bake crust for 10 minutes, then with filling for additional 30 minutes.
