
Cornbread muffin mix in a jar is a great convenience item to keep on your pantry shelf, or give as a gift. This recipe is gluten-free, vegan, and makes it easy to whip up a batch of cornbread muffins in just a few minutes. I always make my cornbread in muffin form since I find that it holds together better than slices. These are great to serve alongside some BBQ soy curls and baked beans.

GF Vegan Cornbread Muffin Mix
Ingredients
- 1 c GF cornmeal
- 1 c gluten free 1-1 baking flour
- 1/4 c soy milk powder
- 1 T baking powder
- 1/4 t salt
- 1/3 c sugar
Directions
- Layer all ingredients in a quart-sized mason jar. Add lid and store until ready to use.
- To use: Shake jar to mix dry ingredients. Add to a medium bowl and whisk in: – 1 c water – 1/3 c oil – 1 t apple cider vinegar
- Scoop into greased muffin tin, and bake at 350F for 20 minutes.
