
This soup mix is easy to throw together, and makes for a quick convenience meal or snack to keep on the pantry shelf. I’ve included a bunch of herbs and spices that I keep in my pantry to give it a nice flavor, but feel free to customize the list to your taste.

Vegan Potato Soup Mix
Ingredients
- 2 c potato flakes
- 3/4 c soy milk powder
- 2 T nutritional yeast
- 1/2 T salt
- 1/2 T dried parsley
- 1 T dried chives
- 1 t poultry seasoning
- 1 t garlic powder
- 1 t onion powder
- 1 t paprika
- 1/8 t celery seed
- 1/8 t white pepper
- 1/8 t ground thyme
- 1/8 t turmeric
Directions
- Add all ingredients to a quart sized mason jar, and shake to combine.
- To use, combine 1/2 c of mix with 3/4 c boiling water in a bowl, and stir to combine. Add a splash of tamari if desired, and additional water to thin the soup to your preferred consistency.
