
When I came across a fruit-based gelato recipe last year, I had to try to re-create this beet, strawberry, and dragonfruit flavor that I’d had at an ice cream shop. The color is beautiful, and this recipe is easy and has a much softer texture than other vegan ice creams that I’ve tried at home. It makes for a great, cooling treat in the summer!

Beet, Strawberry and Dragonfruit Vegan Gelato
Ingredients
- 3/4 c soy milk
- 1/3 c sugar
- 1 T beet powder
- 1 t vanilla extract
- 12 oz frozen dragonfruit
- 10 oz frozen strawberries
Directions
- Combine soy milk, sugar, and beet powder in a small saucepan over low heat. Whisk until sugar and beet powder are fully dissolved. Remove from heat, stir in vanilla, and pour into an ice cube tray. Place in freezer until frozen, at least 2 hours.
- Thaw frozen fruit on the counter for 30-60 minutes before making the gelato. It should still be frozen, but softened enough to blend.
- Add thawed fruit and frozen milk cubes to a food processor, and blend until smooth.
- Pour gelato into a storage container and place back in the freezer for at least an hour before serving.
